Ingredients for 1 pacotizing® beaker
1 pacotizing® beaker = 10 portions
- 70 g sugar
- 390 g milk
- 60 g cream 35% fat
- 30 g butter
- 85 g light sponge cake
- 6 g vanilla paste
- 75 g Röteli
- 95 g juice from the Griottes cherries
- 2 g cinnamon stick
- 40 g Griottes cherries
- 0.5 g orange zest
Recipe preparation
(1) Bring the milk, butter, cream, sugar and cinnamon stick to the boil, remove the cinnamon stick and pour over the remaining ingredients, leave to cool and pour into a pacotizing® beaker.
(2) Close with the lid, label and freeze at −20 °C for at least 24 hours.
(3) When needed, pacotize® once with overpressure.
