Hummus

Ingredients for 1 pacotizing® beaker

1 pacotizing® beaker = 10 portions

  • 400 g canned chickpeas, drained
  • 60 g tahini (sesame paste)
  • 7 g salt
  • 100 g olive oil
  • 90 g chickpea water (from the glass)
  • 30 g lemon juice 2 g dried cumin

Recipe preparation

(1) Strain the chickpeas with a sieve (catch the liquid) and rinse with cold water. Mix all ingredients together and pour into a pacotizing® beaker.

(2) Close the pacotizing® beaker with the lid, label and freeze at −20 °C for at least 24 hours.

(3) When needed, pacotize® five times with overpressure.
